Serves 2
2 x wholemeal tortillas
2 x ripe avocados
2 x spring onions
2 x small fresh green or red chillies
1 x lime or lemon ( lime works better)
8 x cherry tomatoes
Handful of washed and dried baby spinach
Handful of fresh basil
6 small mozzarella balls
4 tbs red pesto Paste ( u can buy it in any supermarket the one I used is home made - ill post recipe later :) )
Olive oil
Balsamic vinegar
Tabasco sauce
Method:
Chop the spring onions and chillies ( remove the seeds), half the cherry tomatoes and set aside.
In a small bowl fork mash lightly the avocados and add the spring onions. Season with salt and pepper and squeeze the juice of half or a whole lime depending on your taste. Add a little bit of olive oil ( 1tbs) and a bit of balsamic vinegar and a dash or two of Tabasco sauce. Mix well.
Place your tortillas in a plate and microwave for 8 to 10seconds if you kept them in the fridge. If there were kept in room temperature don't bother with that.
Place a handful of baby spinach on each tortilla, then divide equally on top of that the guacamole, (I know it's not a real one as there is no garlic but this is my version), and add a couple of tbs of red pesto. Finally top it with the mozzarella balls, basil, halved cherry tomatoes and fresh chopped chillies. I also add a little bit more of olive oil for some extra taste :)
And that's it! Easy no? I must admit eating it can be a messy business but it's ever so yummy so who cares!

Ps you can also sprinkle on top pine nuts or pumpkin seeds. I would normally do but I have run out of them at the moment.
