My fried Magda told me about this gorgeous parsley dip recipe while taking our little ones out in the park. It's simple and you can enjoy it with crackers, raw vegetables such as cucumber, peppers and carrots or you could have it as a salsa with white fish or even meatballs like i did tonight. Above is what my dip looked like - photo is a bit fuzzy but hey it was taken with my iphone.
So here goes: Take a large bunch of parsley, chop off the stalks a bit and whiz it in a food processor with some olive oil, a clove or two of garlic (depending on how you like it), the juice of half a lemon, salt and pepper and 2 to 3 small anchovies - again that depends on your personal taste. You can omit them altogether if you don't like them. Thats what i did the first time i made this as i wasn't that adventurous, but second time round i tried it with the anchovies and it was super yummy! Not fishy at all!
So that's that! Pretty simple huh? Again you can adjust the amount of lemon depending on your taste.
