Super Easy Greek spinach pie - Spanakopita



My aunt and mum make a great spinach pie which i simply cannot recreate therefore after a lot of experimenting here is a very simple way of making Greek Spinach pie my way!

You will need:
500gr or 1kg (depending on the size of your pyrex) washed baby spinach. The pyrex i've used is medium to small size.
4 spring onions chopped
1 egg lightly beaten
500grs of short crust pastry (in waitrose or sainsbury's you can find them in sheets - very convenient!)
Pepper
1 packet of feta cheese

Preheat oven to 180c and grease with a little bit of olive oil on a tissue the bottom and sides of your baking dish / tray.

Saute or steam the spinach and season with pepper - do not season with salt as feta cheese is already very salty. Once wilted, remove from the heat and place in a colander to squeeze out excess liquid. Its very important you get the rid of all the spinach water otherwise your pie will become soggy. Place spinach in a bowl and add the lightly beaten egg. (leave just a tiny bit of egg that you can use at the end to brush on the top of your pie to achieve a golden colour)

Roll out your pastry and if working with the sheets just place one of them on your baking dish. Place the spinach on top and crumble generously at least 3/4 of the feta cheese. (If you are making a larger pie use the whole pack. Optionally you can also grate 120grs or so of parmesan cheese and place on top of the feta cheese. I tried it out today and it worked very well.

Almost there...

Finally, place the second sheet of pastry on top of your spinach and cheese mixture. With a brush, coat the top pastry layer with the remainder of the egg and make sure your pastry is tucked in neatly on all sides and there is no gap between the bottom and top layers on the sides.

That's it...

Place in the oven for 40minutes or until golden brown and then it's done.

Leave to cool for at least 10minutes before you cut it. It will last well for at least 3 days in the fridge, however it never lasts more than a day one in our household.

Its very popular with small kids too, a great nutritious snack. Definitely one of Oskar's favourite.
